Jackson-Triggs Proprietors' Reserve wines are created by highly talented internationally trained winemakers. Their expertise, combined with Jackson-Triggs investment in advanced wine making technology and equipment, ensures that each wine meets world class standards.
Harvest:The grapes for the Jackson-Triggs 2007 Proprietors' Reserve Meritage were harvested between October 15th and October 31st, 2007, from the select vineyards of van de Laar, Brzeka, Marian Hill, and Watson in the Niagara Peninsula. This was a stellar harvest for Niagara wines - long days with abundant sunshine allowed for optimum ripening conditions.
Winemaking:The wine was fermented with selected yeast strains, and aged in French and American oak barrels for 18 months to enhance complexity and structure.
It underwent full malolactic fermentation.
Winemaker's Notes:This vintage is comprised of 37% Cabernet Franc, 36% Cabernet Sauvignon, and 27% Merlot, three of the classic 'noble' Bordeaux grape varieties. Deep red in colour, the nose is dominated by aromas of ripe raspberries, plum and vanilla underscored by notes of chocolate and black pepper. Rich fruit flavours are supported by supple tannins which yield an extended finish.
Food Pairings:Ideal when served with grilled steaks, roast pork, lamb chops, pasta Bolognese and a variety of aged cheeses.
